Breakfast:
Ani Phyo's raw pancake recipe is... soooooooooo yummy! The recipe even made enough for tomorrow, too. Awesome!
Ingredients:
3 c ground flax
2 T olive oil
1/2 t sea salt
1/2 c agave nectar or maple syrup
1/4 c water
Hand mix and form into patties. You can mix in fresh or dried fruit as well. YUM! I hand mixed the fruit with some agave nectar to make it syrup-y.
**If you're making this for a kid or someone who prefers syrups, jams or other processed fruits.. you could set your frozen berries out to defrost overnight. By morning they will be squishy and soft. Simply add raw sugar, agave nectar, maple syrup or blended dates to the fruit. These squishy fruits will be more like they are used to. Serve as-is or blend to make syrup!**
Afternoon snack:
Raw corn chips and salsa.. we weren't hungry for lunch.
Dinner:
Huge raw taco salad, this time with a few raw corn chips. I love this taco meat! (See earlier raw taco post for recipe. You won't regret it!)
